Biography

Dr Andrew Cleland is a Lecturer in the Faculty of Higher Education at William Angliss Institute, where he lectures in the Culinary undergraduate program, focusing on the role of the chef in society, curation of dining experiences, and culinary futures. His experience includes extensive industry experiences working as a chef both locally and internationally, development of programs for higher education and industry settings, and the design and development of higher education curricula. BRIEF SUMMARY OF THESIS TOPIC

What makes a memorable fine-dining experience? Customers’ and Chefs’ perceptions within a fine dining context.

The overall aim of this thesis is to identify key elements (dimensions) associated with high quality fine dining experiences. The research will incorporate a series of semi structured interviews examining, both hospitality industry professionals’ and customers’ experiences of specific meals in a fine dining context, and thematically analyse their reports. Having identified specific themes these will be utilised in a quantitative survey of customers in order to determine key elements of fine-dining experiences identified by both chefs and customers. The proposed research will contribute to the understanding of the hedonic properties of a fine-dining experience.
